Synthetic phenolic antioxidants (SPAs) are widely used as food additives to delay the oxidation rate of oils and oil products. The concentrations and compositions of SPAs in Chinese residents most popular daily foods and the resulting exposure risk of SPAs are not clear. Therefore, this study collected food samples in 13 food categories (n = 289) from 10 provinces in China. At least one of the SPAs was detected in approx. 99.7% of foodstuffs, and the concentration of ∑SPAs ranged from not detected to 7830 (geometric mean (GM): 296 ng/g wet weight). 2,6-2 tert Bu p-1,4-benzoquinone (BHT-Q) was the main transformation product, but SPAs in food tend to exist in the parent form. A significant difference between food categories was analyzed. The highest GM of ΣSPAs occurred in cereals and cereal products, which was approx. 8 times higher than that in beverages. The estimated daily intakes of ΣSPAs in Chinese preschoolers, school-age children, adults and elderly individuals were 22200, 9970, 7540 and 7700 ng/kg bw/day, resp. The exposure risks of SPAs decreased with age. This is the first simultaneous anal. of SPAs in multiple provinces and multiple categories of foodstuffs.

A molecularly imprinted film (MIF) was prepared on the surface plasmon resonance (SPR) sensor chip for the detection of testosterone. The nanometer imprinted film was synthesized by surface grafting approach. First, the gold sensor chip was modified with an iniferter of benzyl diethyldithiocarbamate to create the “grafting from” polymeric surface. Grafting of the MIF onto the SPR chip was subsequently achieved through UV light-initiated copolymerization of methacrylic acid (functional monomer) and ethylene glycol dimethacrylate (crosslinker) in the presence of testosterone as a model template. The template mols. were then removed to form a MIF with specific recognition sites for testosterone. With this iniferter technique, self-aggregation in the reaction solution phase was avoided and grafting polymerization was confined to the exterior of the chip surface. The grafting process was implemented by in situ monitoring with SPR, which permitted the thickness of the film to be easily and strictly controlled. The chip surface modified with a testosterone-imprinted film was characterized by the methods of polarization modulation IR reflection absorption spectroscopy (PM-IRRAS) and at. force microscopy (AFM). According to the results, testosterone-imprinted film modification of the SPR chip was achieved by the distribution of numerous homogeneous, nanoscale holes on the surface. The testosterone-imprinted film was applied on a SPR sensor chip for the detection of testosterone in the range of 2.5 × 10-16 to 2.5 × 10-6 mol/L in acetonitrile with the lowest determining concentration of 2.5 × 10-16 mol/L. Adsorption experiments showed that there were two kinds of binding sites in the MIF, and the linear correlations between the changes in reflectivity and the concentration of testosterone were y = 19.69 + 1.21x (R2 = 0.9913) and y = 11.5 + 0.45x (R2 = 0.9895), resp. Control experiments utilizing estradiol, estriol, and progesterone as analogs showed impressive selectivity and specificity for testosterone determination The testosterone-imprinted film reproducibility was evaluated with five cycles of rinsing-rebinding and the RSD was 16.8% and 11.2% for the SPR angle changes in rinsing and rebinding resp., demonstrating that the MIF-modified SPR sensor had good reproducibility and repeatability. Finally, the SPR sensor was successfully used to determine testosterone in artificial urine samples with recoveries from 85.2% to 92.8%.

A novel metal-free catalytic one-pot approach has been developed for the esterification of aralkyl ketones RC(O)R1 (R = Ph, naphth-2-yl, 2-bromophenyl, etc.; R1 = Me, Et, benzyl) with alcs. R2OH (R2 = Me, Et, i-Pr, n-Bu) under open-air atm. conditions. The inexpensive iodide/oxone reagent system allowed the cascade C(sp3)-H bond oxygenation, selective C-C bond cleavage and esterification through the both radical and ionic pathways in a stepwise manner in one-pot. This mild, convenient and economically viable catalytic method tolerates the various functional groups to provide the corresponding alkyl benzoates RC(O)OR2 in up to 98% yields with up to 99% selectivity. The efficiency and feasibility of scale-up of the present catalytic system were demonstrated with gram scale experiments (up to 10 g scale).

With the globalization of food trade, its traceability and genuineness becomes increasingly more difficult. Therefore, it is necessary to develop anal. tools to define the authenticity and genuineness of food-derived products. In the current work, headspace solid-phase microextraction followed by gas chromatog.-mass spectrometry (HS-SPME/GC-MS) combined with chemometric tools was used to establish the volatile fingerprint of apple ciders produced in different geog. regions of Madeira Island, in order to define their typicity and to identify putative geog. markers. A total of 143 volatile organic compounds (VOCs) belonging to different chem. families have been identified, of which 28 were found in all apple ciders independently of geog. region. Esters, terpenic and furanic compounds presented on average a higher contribution for the total volatile fingerprint in cider produced in northern region of the Island, whereas alcs., acids, volatile phenols, carbonyl compounds and lactones in cider from southern region. Considering the relative areas of the VOCs, 43 revealed statistically significant differences (p < 0.001) between geog. regions, and 11 between northern and southern regions. A clear differentiation among cider-producing regions was observed on the developed partial least squares-discriminant anal. (PLS-DA) model. Two alcs. (1-hexanol, 1-octanol), 6 esters (Me acetate, (Z)-3-hexen-1-ol acetate, Et hexanoate, Et nonanote, Et octanoate, isoamyl octanoate) and 1 terpenic compound (limonene), can be considered putative geog. markers due to their discriminatory ability. The results obtained recognize the specific and typical geog. characteristics of the cider, which will allow the forthcoming guarantee for the construction of a sustainable platform for the establishment of the authenticity and typicality of the regional cider.
