Flavors profiling in flavored hookah tobacco is an issue of increasing scrutiny for the health sector owing to its adverse effects on humans, especially being heated to produce smoke. This study aims at tackling the components involved in the flavored hookah tobacco from a chem. and biol. point of view. Detecting individual flavor compounds, within a complex hookah tobacco matrix was accomplished using headspace solid phase microextraction (SPME). A total of 114 volatiles were identified in 13 flavored hookah tobacco products, with esters amounting for the major component up to 40%. Whereas oxygenated monoterpenes presented another major volatile class, contributing up to 23%, including (E)-anethole. Superheating flavored hookah tobacco at 190°C resulted in the release of a mixture of phenol derivatives and polycyclic aromatic compounds that are indicative of coal tar, a major component produced during hookah tobacco usage with potential health hazards. This study provides the first comprehensive volatile profile of hookah tobacco products from different origins identifying chem. components involved in flavors. It is expected to serve as informative grounds for the better understanding of hookah tobacco production and usage. The information presented is also expected to raise awareness on the health risks of hookah tobacco smoking. Several studies have indicated that plants are good sources of antimicrobial agents and pharmaceuticals. The present study is focused to evaluate the antimicrobial potential of 11 citrus essential oils (EOs) and terpenes (T), against 18 bacterial pathogenic strains and 4 Candida sp. strains. Volatile compounds present in the citrus EOs were determined by a gas chromatog. anal., allowing the identification of 79 components. Results highlights that lemon, bergamot oil and terpene were effective against more than 54.5% of tested bacteria. Candida spp. strains resulted very sensitive to all terpenes and EOs. Gram neg. bacteria showed lower sensitivity than Gram pos. ones. Among Gram neg., fish pathogens were sensitive to oils, so we suggested their use as possible alternatives in aquaculture farms to prevent bacterial fish diseases. Moreover, results suggested that citrus oils could be a useful tool in the food industry to prolong the shelf-life. Desert truffles are popular ectomycorrhizal fungi valued worldwide for their nutritional and traditional health benefits. Herein, two chief desert truffles viz., Terfezia claveryi and T. boudieri were assessed for their metabolites heterogeneity in context of their volatile sensory and nutrients profile as analyzed via GC-MS. Primary metabolites accounting for nutritive indexes in T. claveryi and T. boudieri were investigated with 61 peaks belonging to sugars, sugar alcs. and amino acids. After headspace solid-phase microextraction (HS-SPME), a total of 106 volatiles were annotated belonging to alcs., ketones, aldehydes, esters, ethers and furans. The abundance of oxygenated monoterpenes as antimicrobials rationalizes for the folk use of desert truffles against trachoma. Benzyl isothiocyanate was detected as the sulfur containing volatile component in desert truffle and absent from truffles. Multivariate data analyses (MVA) revealed that 1-octen-3-ol and 3-octanone were the most significantly contributors in the discrimination of T. claveryi and T. boudieri specimens. Being more enriched in essential amino acids, T. claveryi provided a better sugar diet composition concurrent with lower sugars and higher sugar alcs. compared to T. boudieri. This study provides the first insight into desert truffles metabolites and sensory composition, and to account for its culinary and medicinal uses. The present project deals with the investigation of structure-activity relationship of several quinolinone-chalcone and quinolinone-pyrazoline hybrids, in an effort to discover promising antioxidant and anti-inflammatory agents. All the synthesized analogs were in vitro evaluated in terms of their antioxidant and soybean lipoxygenase (LOX) inhibitory activity. Among all the pyrazoline derivatives, compounds 9b and 9m were found to possess the best combined activity, whereas 9b analog exhibited the most potent LOX inhibitory activity, with IC50 value 10μM. Citrus tea is an emerging tea drink produced from tea and the pericarp of citrus, which consumers have increasingly favored due to its potential health effects and unique flavor. This study aimed to simultaneously combine the characteristic volatile fingerprints with the odor activity values (OAVs) of different citrus teas for the first time by headspace gas chromatog.-ion mobility spectrometry (HS-GC-IMS) and headspace solid-phase microextraction-gas chromatog.-mass spectrometry (HS-SPME-GC-MS). Results showed that the establishment of a citrus tea flavor fingerprint based on HS-GC-IMS data can provide an effective means for the rapid identification and traceability of different citrus varieties. Moreover, 68 volatile compounds (OAV > 1) were identified by HS-SPME-GC-MS, which reflected the contribution of aroma compounds to the characteristic flavor of samples. Amongst them, the contribution of linalool with sweet flower fragrance was the highest. Odorants such as decanal, β-lonone, β-ionone, β-myrcene and D-limonene also contributed significantly to all samples.
