The study aimed to explore the contribution of the microbial community on flavor formation by measuring physicochem. properties, volatile compounds composition and bacterial community of Yongfeng chilli paste. A similar amino acid nitrogen level and different pH, total acid and salt content were observed in five brands of Yongfeng chilli paste. A total of 106 volatile compounds were identified, wherein, Et palmitate, Et trans-4-decenoate, phenylethyl alc. were the common volatile compounds with high content in all samples. Addnl., Oxyphotobacteria-unclassified, Mitochondria-unclassified, Pediococcus, Bacillus, Lactobacillus and Weissella were the dominant genera. Lactobacillus was related to the production of some alcs. and terpenes. Whereas, Bacillus, Pediococcus and Weissella, which showed higher salt tolerance, could affect the formation of esters, such as Et salicylate, Et lactate. Thus, this study provided a basis for further research on the mechanism of flavor formation and some guidance for the improvements of the quality of traditional fermented chilli paste. Biofilm Polysaccharide Display Platform: A Natural, Renewable, and Biocompatible Material for Improved Lipase Performance was written by Dong, Hao;Zhang, Wenxue;Wang, Yibing;Liu, Dong;Wang, Ping. And the article was included in Journal of Agricultural and Food Chemistry in 2020.Application In Synthesis of Octyl acetate The following contents are mentioned in the article:

Most of the microorganisms can form biofilms, which makes biofilms an abundant bioresource to be exploited. Due to the limitations of the application of current immobilization methods for biofilms, we developed an immobilization method called the biofilm polysaccharide display (BPD) strategy while maintaining the native biofilm structure and catalytic microenvironment of Clostridium acetobutylicum B3. Lipase Lip181 showed significant improvements in stability after chem. immobilization. For example, immobilized Lip181 retained 74.23% of its original activity after incubation for 14 days, while free Lip181 was totally deactivated. In addition, immobilized Lip181 maintained high residual activity (pH 5.0-11.0), which showed improved resistance to pH changes. Notably, this method did not decrease but slightly increased the relative activity of Lip181 from 6.39 to 6.78 U/mg. Immobilized Lip181 was used to prepare cinnamyl acetate, and it showed a maximum yield of 85.09%. Overall, this biofilm immobilization method may promote the development of biocatalytic and biofilm materials. To investigate the impacts of wort gravity on perceived aroma characteristic of Tsingtao beer, sensory-directed flavor approaches, including sensory quant. descriptive anal. (QDA), gas chromatog.-mass spectrometry (GC-MS), gas chromatog.-olfactometry (GC-O), and aroma recombination experiments were employed. The result of QDA revealed that the aroma intensities of Tsingtao beer varied with the wort gravity. GC-MS determined 50 volatile compounds in all from the four kinds of Tsingtao beer samples with different wort gravity. Concentrations of most compounds were pos. correlated with beer wort gravity. Then 39 aroma-active compounds in the four beer samples were identified by GC-O, and 33 of them were found exited in Y4 sample with the highest wort gravity. The aroma recombination experiments showed that aroma-active compounds with AI 1 (GC-O detected) could simulate the aroma profile, indicating these compounds were aroma perceived compounds There were 16, 17, 19 and 23 aroma perceived compounds in the four kinds of samples, resp., indicating Y4 had the most abundant aroma perceived compounds This study involved multiple reactions and reactants, such as Octyl acetate (cas: 112-14-1Related Products of 112-14-1).

Impact of crossflow microfiltration on aroma and sensory profiles of a potential functional citrus-based food was written by Hammad, Imane;Dornier, Manuel;Lebrun, Marc;Maraval, Isabelle;Poucheret, Patrick;Dhuique-Mayer, Claudie. Citrus juices can be cold-concentrated by crossflow microfiltration (CMF) in order to obtain functional foods enriched in carotenoids, flavonoids and pectins. The work aimed to characterize the organoleptic quality of this type of micronutrient-dense foods through their aroma profile and sensory anal. Two citrus concentrates with and without a diafiltration step were compared. Both citrus products were very different, linked to aroma compound, sugar and organic acid contents. Due to its sugar/acidity balance and its better aromatic profile responsible for the citrus-floral flavor, the concentrate without diafiltration was preferred by the sensory panel. Thanks to a simple transfer model, we showed that retention of volatiles clearly varied from one aroma compound to another. The terpene hydrocarbons were the most retained by the membrane during CMF, probably because they were strongly associated with insoluble solids by adsorption. Even though the process modified their organoleptic profiles, both citrus-based products were well rated and can be consumed directly as pleasant functional drinks. A new heterogeneous Bronsted solid acid catalyst was prepared by tandem post-functionalization of MIL-101(Cr) and utilized for acetic acid esterification and alcoholysis of epoxides under solvent-free conditions. First, MIL-101(Cr) was functionalized with pyrazine to achieve MIL-101(Cr)-Pyz. Afterwards, the nucleophilic reaction of MIL-101(Cr)-Pyz with 1,3-propane sultone and next acidification with diluted sulfuric acid gave MIL-101(Cr)-Pyz-RSO3H Bronsted solid acid catalyst. Various characterization methods such as Fourier transformation IR (FT-IR) spectroscopy, X-ray diffraction (XRD), elemental anal. (CHNS), XPS, SEM (SEM), energy-dispersive X-ray (EDX) spectroscopy, thermal anal. (TGA/DTA), acid-base titration, and N2 adsorption/desorption anal. were employed to fully characterize the prepared catalyst. This paper studies quadratic modeling and optimization of quaternary equilibrium of liquid-liquid systems of general types, reactive extraction mixtures and aqueous biphasic systems in order to develop an understandable basis of functionally dependent variables that govern optimal solute partitioning within the relevant system. The proposed three quadratic models (QMG, QMR and QMAB), being compatible with multilinear methodol., mimic the equilibrium properties of six test systems relatively accurately, and subsequently, are applied to globally optimizing quaternary equilibrium To remedy an appropriate optimization algorithm, the hybrid gradient method and the derivative variation method are treated and their use for tackling different problems is discussed. The problem of fair imitation of a global optimality is then addressed. The algorithmic solution is completed by the numerical results of six testing problems, being indicative of the fact that the distribution, geometric and solvatochromic properties of components are primary concern to be accounted for a reliable prediction of optimal phase equilibrium This study involved multiple reactions and reactants, such as Octyl acetate (cas: 112-14-1Quality Control of Octyl acetate).
